Stephen Raichlen made on Episode 104 of Project Smoke
. He didn’t make this item on the show, since he baked it in the oven. However he did say there would be a link to the recipe on the Project Smoke
website. Well there wasn’t, but I have all of his grilling cookbook so I found the recipe in Man Made Meals
which he adapted for TV. I made the original recipe, since this is what I had directions for. Also instead of placing the cast iron skillet in a 400 degree oven. I placed it on my baking Egg and let the DigiQ pit controller handle things for me. This cornbread added some pepper jack cheese and jalapeño peppers for a little more kick than your average cornbread. I will let the pictures tell the story and I will add that this was a very moist, tasty cornbread, with both a different base flavor and the added kick mentioned earlier.
