Pot Roast is one of my favorite meals. The concept of a smoked pot roast was intriguing. This recipe came from Smoke & Spice and it produced a very tasty piece of meat with a deep red smoke ring. I believe I may have let it rest in foil a little too long because it was a bit dry. This was recipe was good enough it is worth fine tuning to get just right
