This dessert from
neatly solved a problem. My dad loves oatmeal cookies, but he hates raisins, so oatmeal raisin cookies are out. These cookies substituate a New England favorite, cranberries, for the raisins. My dad loved them and to my great surprise I loved them every bit as much as oatmeal raisin cookies. These cookies had an interesting texture: They were thin and crispy but had a bit of a pull and chew to them at the same time. As you can see from the related photo entries, this was a rather ambitious 5-item cook. I made these cookies the night before while waiting for the rises involved with the HAWAIIAN BUNS
, which I also made ahead. These cookies were very quick and easy to make and I will let the pictures tell that story. There are so many reasons to get the Smoke It LIKE A PRO cookbook, these are yet another one.
