The trick is to smoke the meat and not make the meat smoke

The dough used white whole wheat flour, vanilla extract, buttermilk, corn starch, confectioners & light brown sugar, cream cheese, butter, ginger, crystalized ginger, allspice, baking soda,salt, baking powder & molasses
The flour, salt, baking soda, baking powder, ginger & all spice were added to a bowl…
…and were whisked together & set aside.
The butter, brown sugar & egg were mixed together in another bowl.
Half of the dry ingredients in the one bowl were added to the other bowl, followed by the molasses. Then the other half of the dry ingredients were mixed in.
Everything was mixed until completely combined,
The buttermilk was added in next, & is mixed to combine.
The crystalized ginger was added last & the dough was done.
A cookie scoop was used to portion out the cookie dough.
I used the adjustable rig for this with the oval pizza stone, the rig extender & two grids. The Egg had been stabilized at 375 degrees.
The cookies are ready to come of the grill & cool.
The cookies are cooling on wire grids on their parchment paper. As you can see some of the cookie bottoms were a little dark.
The filling used cornstarch, cream cheese, butter, confectioners sugar & vanilla extract.
The cookies have cooled, the filling is ready & it is time to fill the cookies.

The finished cookies were excellent & the strong flavors masked any burnt flavor the darker bottoms may have had.

I seem to be getting a lot of recipes lately because I see them featured in magazines or websites. This one was on the cover of the King Arthur Flour catalog I received in December. As soon as I saw the picture I knew I had to make these-right away! There proved to be a slight delay because I had to order several ingredients first. This was my first time using my new Adjustable Rig for my Egg. This Eggcessory allows you to grill at multiple levels using multiple tiers of grill grids. It was also my first time making cookies and filled cookies for that matter. While they weren't 100 percent perfect, they were still excellent. I know I will get plenty of practice making these again.
