This recipe from King Arthur Flour was relatively easy to make with a handful of simple ingredient, but it packed great flavor in every bite. The dough was mixed in my stand mature and the finished dough goes into the refrigerator for an hour to firm up. After chilling, the dough was rolled out to a thickness of 1/8” and 3” rounds were cut out with a cookie cutter. The dough rounds were placed in a tart pan and filled with the lemon custard filling. Thirty minutes later at 375 degrees and the tarts were baked. After a 10 minute rest the tarts were removed from the tart pan and allowed to cool. The tarts had great flavor and were VERY tart, no doubt from the lemon zest, and tasty. Even though they were mini tarts they were very rich and filling. One was filling and two were on the verge of belly busting. I definitely will make these again.
