The shells for the tarts used: All-purpose flour, salt, sugar, cream cheese & butter.
The butter & cream cheese are whipped together.
The dry ingredients were added and mixed until they clung together in one cohesive mass.
They dough was turned out and formed into a 1” high disc which was wrapped in plastic wrap & refrigerated for an hour.
The finished filling was mixed in a measuring cup so it could be poured into the shells.
The dough is ready to roll out after spending 1 hour in the fridge hardening.
The pastry shell dough has been rolled out and the tart pan has been greased.
The dough for the shells was cut out with a cookie cutter & placed in the tart pan.
The filling was poured into the shells.
The tarts are on the Egg which has been preheated to 375 degrees.
The tarts baked for 35 minutes & here they are ready to come off.
The tarts has a buttery crispy shell and a very tart lemony flavor. They were very rich too: After eating 2 I thought I was going to explode.

This recipe from King Arthur Flour was relatively easy to make with a handful of simple ingredient, but it packed great flavor in every bite. The dough was mixed in my stand mature and the finished dough goes into the refrigerator for an hour to firm up. After chilling, the dough was rolled out to a thickness of 1/8” and 3” rounds were cut out with a cookie cutter. The dough rounds were placed in a tart pan and filled with the lemon custard filling. Thirty minutes later at 375 degrees and the tarts were baked. After a 10 minute rest the tarts were removed from the tart pan and allowed to cool. The tarts had great flavor and were VERY tart, no doubt from the lemon zest, and tasty. Even though they were mini tarts they were very rich and filling. One was filling and two were on the verge of belly busting. I definitely will make these again.
