This recipe from the Project Smoke TV show was the second version of this Stephen Raichlen’s take on baked apples I have made. Same general idea, but different fillings. The apples are scooped out and in this case are filled with a tasty filling made in the food processor. The apples are smoked for 40 minutes at 225 degrees until they are browned and “squeezable soft”. In my opinion this version had tastier fillings and so it was a little better than the first version I made years ago. The only thing I would do differently next time would be to add the marshmallows with 15 minutes left. They were on for the full time and had begun to “melt” down and were dark brown in color. Where the marshmallows were mostly “eye candy” for my guests it was’t a big deal.
