This was a great recipe for swordfish using an Asian influenced marinade. It was very quick to prepare and had great flavor. The swordfish was marinated for 30 minutes, no doubt to keep the marinade flavor from over powering the subtle flavor of the swordfish. Before adding the fish into the marinade, 2 tablespoons of the marinade are reserved for use in basting on the grill. It was a quick cook too, as the swordfish is direct grilled over high heat for 4 minutes per side. This fish had wonderful flavor. The flavor from the marinade was perfectly balanced with the fish flavor. I served the fish over a bed of THAI BLACK BEAN SALAD, which was the perfect accompaniment. A great tasting meal that is easy to make - it doesn’t get too much better than that..
