I’d never heard of Bratwurst until I moved to the midwest to go to college. Out there brats are a tailgating staple. I never got around to doing this recipe from the Cook’s Illustrated Summer Grilling Guide 2009 last summer. Having done a couple great recipes from the 2010 version I figured I should revisit the 2009 version. These brats were seared, then cooked in the beer, mustard & onion sauce, and then removed & seared again. The resulting brats were crispy & tasty, the onions were soft & had a great grilled flavor and the sauce served as the condiment. The most difficult thing about this recipe was keeping the sauce in the tub simmering & not boiling. Once I got the temperature setting right it was an easy cook. It will be a breeze next time - and there will be a next time. Soon
