Grilled Pita with Zataar
The zataar recipe was 4 dried herbs: marjoram, oregano, toasted sesame seeds & thyme, plus kosher salt
The zataar is ready to be mixed
The zataar ingredients have been blended
The pitas are on the grill over Medium High heat
The first side of the pitas is done & the side with the zataar rub is being grilled
The finished pitas will be brought inside & cut into wedges
The smoked egg pate & grilled pita with zataar
These grilled pitas could stand on their own
But they are even better with the smoked egg pate spread on them.

This recipe from PLANET BARBECUE was combined with SMOKED EGG PATE to make a very tasty meal. Zataar is a herb seasoning blend very common in the Middle East. The pitas were brushed with olive oil on both sides and topped with the zataar. The pitas were grilled using Medium High direct heat which is hot enough you have to keep on your toes. The finished pitas were sliced into wedges and served with the egg pate. The egg gets spooned onto the pita wedges. The pita was very flavorful between the zataar and the charring it received on the grill. The exterior was crispy and the inside was still soft. These tasty could easily stand alone as a meal in themselves.
