This recipe was the perfect solution when I was looking for something quick to make using items I"d already had on hand. The Egg is so good for making pizzas that I now always have pizza toppings on hand so I had a winner. Part of the "Quick" in the recipe involve using store bought pre-made pizza dough. I had to run an errand for an hour before I could cook the calzones. So I was able to make a batch of BGE PIZZA DOUGH which is quick to whip up and most of the 90 minute rise would occur while I was out. When I got back I lit the Egg and I assembled the ingredients and began the cook. I made a few changes to the ingredients. First I used regular pepperoni, not Turkey pepperoni as called for. Secondly I used a shredded 6-cheese Italian cheese blend instead of just mozzarella. Lastly I put on more Italian seasoning than the recipe called for. 1 teaspoon over 4 calzones worth of topping just seemed stingy. I used a table spoon. I liked these calzones as well as any I've had in a restaurant and I am rather pleased at how well they turned out for my first attempt.
