My favorite pizza is a Pepperoni and Ham pizza but this, new to me, pizza from Grilled Pizza & Piadinas
is a close second. The pizza was very popular at one of the authors’s restaurant. It uses a chunky tomato sauce which is more like a paste than a sauce. There are 3 meats: pepperoni, hot Italian sausage & bacon: two cheeses: parmesan & mozzarella; & the other toppings are green pepper & red onion. I used the cooking method I recently learned from Pizza on the Grill

. The Trattorian pizza was the best of the 4 grilled pizzas I made this week. The sauce was very tangy, surprisingly so, and the toppings were a great blend of sweet & hot. The crust once again was golden brown, crispy on the outside and soft and tasty on the inside.
