I used to grill tenderloin a lot, but I’d never smoked it until now. The recipe called Apple Smoked & Apple Brined Pork Tenderloin came from Paul Kirk’s Championship BBQ. It was a simple recipe with an apple juice marinade for a couple hours followed by a dry rub. The marinade is boiled and used as a basting sauce. Apple wood is used to smoke it. The total smoking time was 2 hours and the meat was taken to 145 degrees. This was the tastiest and most moist pork tenderloin I have ever made. This recipe is a keeper.
