This recipe from The Barbecue Bible can be rotisserie or indirect grilled. The recipe creates a pork roast like you might get in the Tuscany region of Italy. The pork is butterflied to get the spice paste on as much surface area as possible. The self basting properties of rotisserie cooking make for a moist roast.
