With the prices going up supermarkets are selling more thin cut porks chops. These can be a problem to cook right. You can end up with a nicely marked outside and a dry overcooked inside, or a perfectly cooked interior and a colorless tasteless unmarked exterior. Cook’s Country solved the problem by putting the chops in the freezer for 30 minutes. This retarded the cooking of the interior while allowing the outside to get nicely marked. The butter and brown sugar brushed on the outside also help the meat brown. These chops were.
