These ribs are direct grilled, not indirect grilled and smoked which is the traditional way of preparing ribs. It is from BBQ USA and is based on ribs as they are prepared in the Rendezvous Restaurant in Memphis, TN. The ribs receive salt, pepper and are direct grilled. When they are finished they receive a spicy dry rub. These ribs have a different taste to them and are a great change of pace.
