Grilled Chicken w/ Goat Cheese
The chicken is marinated in the fridge for 4 hours using olive oil and fresh ground black pepper
The chicken is ready, the grill is heating and it is time to mix the goat cheese with some chives
The goat cheese chive mixture
The chicken is direct grilled over medium high heat
The breasts are flipped & topped with the goat cheese chive mixture while grilling the second side. You need to watch for flare ups.
The chicken was served over a bed of brown rice and chives, with peas on the side
The chicken had a wonderful buttery flavor and reminded me of something you would get in an elegant restaurant

I spotted this recipe from my new cookbook Grillin’ w/ Gas when I found the Chicken Spiedini recipe. This one is also made from boneless skinless chicken breasts. In this case the chicken gets marinaded in olive oil and black pepper for four hours. The chicken is direct grilled and topped with a mixture of goat cheese and chives when the chicken is flipped to the second side. The chicken was moist and had a nice subtle almost buttery flavor.
