I spotted this recipe from my new cookbook Grillin’ w/ Gas when I found the Chicken Spiedini recipe. This one is also made from boneless skinless chicken breasts. In this case the chicken gets marinaded in olive oil and black pepper for four hours. The chicken is direct grilled and topped with a mixture of goat cheese and chives when the chicken is flipped to the second side. The chicken was moist and had a nice subtle almost buttery flavor.
