TV show on PBS. When I saw the episode on TV I knew I had to try these chicken wings from South Africa. Piri Piri is the name of the hot pepper sauce used for the marinade and the glaze. A Piri Piri pepper is a small hot pepper from Brazil. The wings are marinaded for 6-24 hours and then are grilled for about 45 minutes using indirect heat. A glaze using more Piri Piri sauce is poured over them, plus some cilantro, just before serving. The wings had a unique flavor which I liked very much. It was sweet and hot and next time I plan to use more of the Piri Piri sauce in the marinade.
