The trick is to smoke the meat and not make the meat smoke

This was another case of watching Steven Raichlen’s Primal Grill TV Show TV show on PBS and instantly having another item added to my “Grilling To Do List”. The recipe came from PLANET BARBECUE. Chicken thighs were butterflied and boned and then pounded to flatten them somewhat. The inner cavities were seasoned and receive a diced meat and cheese filling. After seasoning the outside and brushing on some bacon fat, it was off to the grill for direct grilling over medium heat. They were supposed to grill for 8 minutes a side, but an instant read thermometer said they weren’t done. I don’t know if it was the weather turning colder or what, but they actually took 12 minutes per side . The chicken bundles were served on a bed of rice and they were delicious. The outside was crispy and the bacon fat gave them a smoky flavor. The insides were moist and the filling had a great flavor.
