This Turkey was cooked low and slow to produce a moist  tasty bird with a nice hint of smoke. You do lose the crispy skin, but the other benefits are worth it. This recipe is a modified version of  the Cajun Smoked Turkey recipe from HOW TO GRILL The cavities were filled with apple and onion chunks.
