After a year of various types of quesadillas under my belt, I felt it was time to revisit the first one I ever made: the STEAK QUESADILLA
. While those were great I wanted to try a few new things in terms of ingredients and methods. While I used a lot of the same veggies, I added corn and zucchini to the mix and I grilled them this time around instead of sautéing in a frying pan. I used red onion instead of white onion. I used fresh oregano instead of fresh cilantro. For cheese I used pepper jack instead of the Monterey jack and cheddar blend. For the steaks I used flank steak instead of rib eye and a rub instead of a marinade. Lastly I made my own SALSA
instead of the store bought variety. The pictures below will show the prep involved, the bottom line here is how did the turn out ? While the steak quesadillas last year were very good, these were even better. The flank steak cooked to medium rare was even more tender and the rub gave it great flavor. Grilled food always tastes better than the same thing cooked on the stove and all the veggies here were grilled. Lastly the pepper jack cheese was more flavorful and added a nice little kick. Plus making my own SALSA
