The trick is to smoke the meat and not make the meat smoke

German Potato Salad
The first step is to grill up the potatoes and onion
The red potatoes are cut into quarters and tossed with some olive oil, Kosher salt & black pepper
The red onion is cut into 1/2” thick slices & brushed with olive oil. I used bamboo skewers to help hold the onions together
The onions are grilled ofr a little over 10 minutes. The potatoes took about 20-25 minutes. I pulled the smaller ones first.
The potato wedges are turned several times during the cook
The onions are diced and the potato wedges are cut in half after grilling
The dressing was made from small slices of bacon, celery, vinegar, water, mustard, Kosher salt, pepper & diced pickles
The dressing is done after it has thickened a bit
The pickles, bacon, & Italian parsley are added, followed by the dressing and then the salad is tossed to mix
The salad is mixed and at this point can be served warm or at room temperature
I used the salad at room temperature and it had great smoked flavor plus a wide variety of other flavors on top of that
This was the perfect side dish for some ham & cheese sandwiches served on some bread I made earlier in the week & froze

One of the things I like about these grilled potato salads I have made lately is they can be eaten before the main meal or as a side dish accompanying the meal. This recipe came from Weber’s Real Grilling and started with grilling some potatoes and onions. The potatoes are parboiled to get them fork tender and they are cut into wedges before grilling. The onions slices are diced after grilling. The dressing for the salad is made by frying up some bacon bits, followed with some celery. To this mix is added the diced grilled onions, mustard, vinegar, water, salt & pepper. This is poured over the potatoes and the some diced pickles and Italian parsley are added. This salad has a great smoky flavor, provided by the grilled potatoes and onion plus the bacon. The dressing is both sweet and tangy and as mention this makes a great side dish or starter course.
