This was the companion recipe for the NONNA'S STUFFED FLANK STEAK recipe I made this day. While the flank steak was great this tasty side dish was a home run and was the pick of the day for everyone but me. I liked it too, but I liked the flank steak even better. Even my dad came around. He was initially disappointed when he found out this was not a traditional mayo based cold potato salad we were having. He ended up loving it too. It is simple enough to make. You parboil some sliced potatoes and grill them along with sliced onions & red peppers . Once of the grill the veggies get diced and the potato slices get quartered. There is a vinaigrette dressing that gets added next together with some capers, herbs and seasonings. The salad cools for 15 minutes and the dressing gets absorbed by the dry ingredients. What your left with is a most tasty side dish that will be a hit with almost any dish you choose to serve it with.
