Grilled Sweet Potato & Pepper Salad
The dressing was made from lime juice, cumin, garlic, jalapeno pepper, salt, pepper & EVOO

The 1/2” thick sweet potato slices are in a grill basket & get a light brushing with the dressing prior to grilling
The peppers & sweet potatoes are grilled over direct medium heat
After several turns and 20 minutes the peppers & sweet potatoes are done
The sweet potatoes are put in a covered bowl to steam a they cool, which helps loosen the skins
After cooling the sweet potato slices are diced into 1/2” cubes, added to a mixing bowl and brushed with more dressing
The peppers took about 15 minutes before their skins had loosened. After the skin is removed the peppers were diced
The cilantro gets coarsely chopped, while the scallions & celery get thinly sliced and added to the bowl.
The ingredients are in the mixing bowl & it is time to add some more dressing before mixing everything together
The salad is mixed and is ready to serve at room temperature which means you cn make it up a little ahead of time
The salad was part of three new dishes I made this day. The other two were herbed potatoes & Tri-Tip with Chimichurri Sauce
The salad had a nice flavor and people kept going back for more throughout the meal
The three items I made that day had similar seasonings & went very well together like a meal from a fine restaurant

This grilled salad recipe came from Weber’s Real Grilling and started with grilling some sliced sweet potatoes and 4 red peppers. The sweet potatoes are brushed with a dressing made from EVOO, lime juice, jalapeno pepper, garlic, cumin, salt & pepper just before grilling. While the sweet potatoes and red peppers are cooling you can chop up some cilantro & slice up some scallions and celery. The sweet potato gets cut into cubes as does the peppers after having their charred skins removed. The dressing is used to moisten this mixture before adding the celery, cilantro and scallions as well as some salt & peeper. The salad is served at room temperature so you can make it a little bit ahead of time. This was another sweet (lime juice, sweet potato) and spicy (jalapeno peppers, scallions) blends that is so popular in Asian cuisine. It was very tasty and there was very little left from the big batch I made-always a good sign.
