This grilled salad recipe came from Weber’s Real Grilling and started with grilling some sliced sweet potatoes and 4 red peppers. The sweet potatoes are brushed with a dressing made from EVOO, lime juice, jalapeno pepper, garlic, cumin, salt & pepper just before grilling. While the sweet potatoes and red peppers are cooling you can chop up some cilantro & slice up some scallions and celery. The sweet potato gets cut into cubes as does the peppers after having their charred skins removed. The dressing is used to moisten this mixture before adding the celery, cilantro and scallions as well as some salt & peeper. The salad is served at room temperature so you can make it a little bit ahead of time. This was another sweet (lime juice, sweet potato) and spicy (jalapeno peppers, scallions) blends that is so popular in Asian cuisine. It was very tasty and there was very little left from the big batch I made-always a good sign.
