Info:About 75 years ago in Alabama a man named Bob Gibson started making a BBQ chicken with a unique white BBQ sauce. This chicken is famous in BBQ circles and appears in 3 of my BBQ cookbooks. The one I chose to make was from Smoke & Spice. I was really looking forward to trying this recipe, but I must admit to being underwhelmed with the results which were a tad bland. For this recipe the boneless chicken breast receive a spicy rub. They sit at room temp for 20 minutes. Meanwhile the mayo and vinegar based white BBQ sauce is whipped up. Part of it is set aside and thinned with water to make a mop sauce that is used as the chicken goes on the smoker and when it comes off. The breasts smoke for about 40 minutes and then the sandwich is assembled. Two slices of toasted bread are coated with the white sauce on one side and a lettuce leaf is added. The chicken is added and the second slice and lettuce leaf goes on top. I am going to try the versions of this recipe in some of my other books, as I’m sure there is a good reason this recipe is as famous as it is.
