Fine Cooking Magazine does periodic special supplements such as the this recipe came from called Grilling. The recipe made a very interesting sandwich that was a unique blend of sweet and spicy. The chicken used a very spicy rub which was balanced by an onion marmalade. When I first read the name of the recipe, I thought it said Orange marmalade, but onion marinade turned out to be quite sweet in its own right. The sandwich consisted of focaccia bread toasted on the grill, some baby arugula, some of the onion marmalade, thin slices of the grilled chicken, more onion marmalade, more arugula & the top piece of focaccia. It was different than any other sandwich I’ve tried and one I plan to make again soon. The side dish for this meal was a GRILLED VEGETABLE SALAD also from the same issue of Grilling Magazine.
