Lately I’ve been wanting to try rotisserie tri-tip so I decided to look for a suitable recipe. I found many for Santa Maria style rotisserie tri-tip, but I’ve already done that via direct grilling. What I finally found in WEBER'S ON THE GRILL - STEAK & SIDES
was a tri-tip steak sandwich that was a perfect candidate for adapting to the rotisserie. The roast received a mustard/herb paste. This was perfect to do o the rotisserie: With that flavorful paste on the crust, you wouldn’t miss that direct grill sear. The other change I made was to use baguette style rolls instead of slices of sourdough bread. All-in-all it was a big success. The rotisserie tri-tip was excellent and the sandwich was a home run.
