Gazpacho (chilled soup) is a side that doesn't get cooked on the grill, but is a natural pairing for a grilled paella. I paired the PAELLA VEGETARINA (Vegetarian Paella) I was making this day with: Gazpacho Oriental. This recipe from Paella, Paella adds a few Eastern ingredients: soy sauce, rice wine vinegar, scallions & lo mein noodles to the traditional gazpacho ingredients. The veggies are cut into slices or chunks suitable for the food processor. The veggies and the liquids are then divided into two smaller batches for processing. After they it is processed, the gazpacho goes straight into the refrigerator until serving time. This gazpacho was served with a garnish of finely chopped scallions and lo mein noodles. This gazpacho tasted similar to the GAZPACHO ANDALUZ that I made last week except for a more prominent cucumber/zucchini flavor and I liked the garnish used with this one better. If you haven't tried gazpacho, it is a refreshing & satisfying change of pace in the hot weather.
