Thai black Bean Salad
First some red bell & jalapeno peppers & celery were diced, garlic minced, ginger grated & cilantro chopped
the other ingredients were black beans, corn, sesame oil, rice vinegar, lime juice & salt
Most of the dry ingredients were placed in a large mixing bowl
The dry ingredients were mixed & then topped with the oil, vinegar, lime juice, garlic, ginger & salt which were pre-mixed
The salad spent an hour in the fridge & then is ready to serve
The salad had a wonderful blend of Asian influenced flavors
For this meal I served it with swordfish, but this salad could be served with almost any meal or stand alone.

This salad was made to accompany the GINGER SOY SWORDFISH I was making this day. But after having it, I now now this would be great by itself or with almost any other dish. I will let the pictures tell the rest of the story
