Ever since I started in doing soups in earnest this year, I have wanted to make a beef stew. For some reason I was having trouble finding recipes for it. This past weekend I tried again and turned up two promising candidate. What I liked about this particular one is almost all of the vegetables ended up being grilled. I took the basic recipe and added potatoes and some frozen snap peas and changed the chicken broth to beef broth and added one extra can to make up for the extra ingredients. for the beef I grilled up about 2 pounds of sirloin steak. While these were grilling I also grilled the peppers, zucchini, & corn on the cob. Then it was about an hour of chopping & slicing everything up. Once everything was sliced or diced up the onions, shallots and garlic were sauteed and then the broth and other ingredients were added. The stew simmered for about 2 hours and it was off to the fridge. The soup was very tasty and I was surprised how well the fresh thyme I added held up. You could definitely tell most of the ingredients had been grilled too as there was a great smokey flavor. CB’s EZ “GRILLED” LAMB & VEGETABLE STEW RECIPE
