. It looked like a tasty recipe, but it only grilled the chicken. The other veggies where simply diced and added to the stock. Well I’d already made a vegetable soup that used most of these same veggies and grilled them to great effect. So I grilled the corn, red, green and jalapeno peppers, tomatoes, garlic, carrots and zucchini based on what I’d learned making the GRILLED VEGETABLE SOUP
. In fact the only items in this recipe I didn’t grill was the frozen peas. I just couldn’t figure how to get them on a skewer. Just kidding there, but not kidding when I say the soup turned out great. It had a diverse range of flavors that changed a bit with every bite. The soup stock itself also had a nice hint of smoky flavor. This was a lot of work, but was well worth it. The next time I will probably make it a day ahead of time because we all know soup gets better over time.
