This soup recipe came from the BBQ area of the website about.com. It looked like a tasty recipe, but it only grilled the chicken. The other veggies where simply diced and added to the stock. Well I’d already made a vegetable soup that used most of these same veggies and grilled them to great effect. So I grilled the corn, red, green and jalapeno peppers, tomatoes, garlic, carrots and zucchini based on what I’d learned making the GRILLED VEGETABLE SOUP. In fact the only items in this recipe I didn’t grill was the frozen peas. I just couldn’t figure how to get them on a skewer. Just kidding there, but not kidding when I say the soup turned out great. It had a diverse range of flavors that changed a bit with every bite. The soup stock itself also had a nice hint of smoky flavor. This was a lot of work, but was well worth it. The next time I will probably make it a day ahead of time because we all know soup gets better over time.
