Grilled Vegetable Soup
The ingredients: chili pepper, red & yellow peppers, celery, garlic, onion, tomato, with some garlic, lemon juice & thyme
The veggies were sliced & coated with olive oil, kosher salt & black pepper before being taken out to the grill.
The veggies were given a quick sear on high heat to develop a nice char on the skins
Half of each type of veggie got puréed for the broth & the other half diced and added to the broth
The puréed veggies, which get added in with V8 & tomato juice, Worcestershire sauce, lemon juice, salt & pepper

The stock is simmering and it is time to add the diced veggies.
I baked some soft bread sticks to serve with the soup which had been refrigerated and was served cold
The soup was very tasty with a great blend of spicy, smoky & sweet

This tasty recipe came from Grilling With Gas. I wanted to focus on doing more vegetables this summer and this looked like a real tasty one. You start by grilling some onions, squash, zucchini, red & yellow peppers & chili peppers under high heat to get a nice char on. Half the grilled veggies were puréed in a food processor and combined with V8 and tomato juice to make the broth. The other half were diced and added to the broth. This soup is considered a summer soup and is actually served cold from the refrigerator or at room temperature. I baked some soft bread sticks to go with this dish and it was a perfect side dish. I am trying to become more of a veggie fan and this soup is a great start in that direction.
