Let’s cut to the chase here: This (Veggie?!?) dish from
SMOKE IT LIKE A PRO
is one of the best dishes I’ve ever tasted. Ironically it was not on the list of items I planned to make from this cookbook. A week ago my Big Green Egg dealer had their Fall Customer Appreciation Day..Eric Mitchell, the cookbook’s author, and his wife Cindy were there cooking for the event. They made this dish and I couldn’t believe how amazing it tasted. That is why, one week later, I was planning a meal around what would go good with this SIDE dish. Normally you pick a main dish and then the sides. This time I wanted to pair things with this side. It is not necessarily a rookie meal. There is a fair amount of prep involved. Like many stir frys, the prep took far longer than the cook. This recipe is not something you might want to try for your first stir fry using your wok.There is a lot of food to keep moving around the wok, and I don’t know that you could make it on a wok smaller than the 16” size I have. The word “summer“ in the name is due to the use of fresh ears of corn and fresh geen beans instead of lima beans. I rarely rave about veggies, but this recipe is worth the price of the entire book by itself!
