The trick is to smoke the meat and not make the meat smoke

The Egg has been pre-heated to 500 degrees and has been stabilized. The ingredients are out at the grill and the wok and some vegetable oil are on the Egg pre-heating.
The first or two batches of string beans are being stir -fried in some vegetable oil.
The string beans are heated until they have brown spots on them & they are beginning to wither a bit.
The first batch of dtring beans is being hald in a bowl while the second batch is being stir-fried.
When the second batch of string beans is done, it is pulled & held. The ground pork is now being stir-fried together with the minced ginger.
The pork and ginger are cooked until just before the pork is fully cooked and then the chicken broth is added.
The chicken broth has been added and is brought to a boil.
Once the chicken broth has been brought to a boil the beans are added back in and everything is stir-fried until most of the liquid has been cooked off.
The string beans are out of the wok and in a bowl where they will be held for 3 hours They are served at room temperature.
The string beans are served at room temperature together with the Sichuan Beef & the Yangchow Fried Rice.
I think the 3 hour holding time allowed the beans to absorb all the flavors from the broth and other items that were cooked in the wok with the beans. They had wonderful flavor.
To my great surprise the green beans were my favories among the 3 courses I made this day.

I made this side dish as part of my third stir-fry. It is the perfect side dish for wok cooking in a way because you make it three hours in advance and serve it at room temperature. So no precision timing and coordination. You can serve it when you other food is ready and it doesn't lose anything if it sits around a little more or less. I loved everything I made this day, but I've got to say this was my favorite out if the three items I made this day.
