Asparagus wrapped in Prosciutto came from MASTERING THE GRILL and was a last minute addition to my Christmas dinner. I was smoking the prime rib and potatoes which left the grill free. I have been trying to push the envelope a bit with the grill to see what else I can do with it in the cold weather besides indirect or rotisserie grilled roasts. Where the meal had already been planned this veggie was icing on the cake and would not be missed if I couldn’t grill it correctly in the cold temps. The prep was easy: Wash and trim the asparagus and put them on bamboo skewers. Then I grilled them on medium high for 5 minutes a side. Once inside, the asparagus were seasoned with pepper and wrapped in prosciutto, The tips were left exposed and were topped with grated parmesan cheese. These were a hit they were crisp but not tough and the prosciutto complimented the taste of the asparagus. I am not an asparagus nut and I liked these: A definite keeper
