As part of my new diet, I m supposed to eat more vegetables.The problem is I am not always a huge fan. But I enjoy just about every veggie out there if they are cooked by grilling them. The high heat caramelizes the paint sugars giving the veggies a great flavor. This grilled veggie recipe looked tasty and colorful. The veggies were grilled in batches and then added into a large bowl and tossed with a balsamic dressing, then they were seasoned with salt (substitute) and pepper andserved. The flavor was great, the natural flavor of the veggies came out, together with some sweetness and smokiness and the dressing was a tart accent to to it all. These veggies went great with this day’s try-tip, but for me grilled veggies go great with most anything.

Low Sodium Diet Changes:
As of July 2016 I need to be on a very low sodium diet. Six days a week I am limited to 1,000 mg. of sodium and on Saturdays I am allowed to have 1,500 mg. I have been learning how to adapt certain recipes to make them very low sodium. I also need to watch my intake of potassium chloride which is used in some salt substitutes to replace sodium chloride. I figured for anyone else trying to watch their sodium intake, I would describe some of the changes I made, together with any comments about the relative success or failure of the tweaks I made. Those of you who can handle more sodium can certainly make the recipe as originally written.
Big Picture: I wanted to do a grilled veggie dish to go with the Tri-Tip I was making this day. Grilled veggies sare inherently low sodium and this recipe simply needed to have the salt removed to get it to be almost no sodium.

Changes:

  • I used Mrs. Dash Table Blend in lieu of Kosher salt to season the veggies.
  • I used Mrs. Dash Table Blend in lieu of table salt to season the veggies at the table. But I found I didn’t need it.

Comments: These grilled veggies were excellent They passed my new test for the success of a modified recipe: It did not seem bland and had lots of flavor plus I never felt like they were missing flavor due to the use of a salt substitute.
