This recipe came from my new WEBER ON THE GRILL - CHICKEN & SIDES. Although it is quick to make it is long on flavor. I made them to go along with CLASSIC ROAST BEEF (see Picture Entry), Alton Brown’s Perfect Mashed Potatoes, & some RUSTIC DINNER ROLLS for my parent’s 55th anniversary dinner. The carrots are blanched so all that is required is a quick sear on the grill. Prior to going out on the grill the carrots are brushed with a blend of melted butter, vinegar, nutmeg, kosher salt & black pepper. The carrots are direct grilled on high for 6 minutes. When the carrots are done they are brushed with the remaining glaze and then served. The carrots were very tasty and well received and since they are quick to make I can see them going into regular rotation.
