I was looking for a simple, quick and good veggie side dish. You see I would have 3 Eggs going this day and I needed something that I could make quickly at the end when the meat was resting and the potatoes were finishing. I am not a huge green beans fan, but if they are grilled that is a whole ‘other story. This had a quick and easy prep. I set up the Egg for direct grilling and stabilized it at 350 degrees. I trimmed the green beans and tossed them with some garlic infused olive oil and seasoned them with Trader Joe’s 21 Seasoning Salute. When I was ready to grill them, I placed them in a mesh grill pan and grilled them for 5 minutes and tossed them and grilled them for another 5 minutes. I held them in a 160 degree oven for 5 minute minutes until everything else was ready. The green beans had a nice crispy snap to them, and the seasoning made them spicy and there was was a hint of garlic flavor from the oil. These made a tasty second side for this days meal where everything came off the grill.

Low Sodium Diet Changes:
As of July 2016 I need to be on a very low sodium diet. Six days a week I am limited to 1,000 mg. of sodium and on Saturdays I am allowed to have 1,500 mg. I have been learning how to adapt certain recipes to make them very low sodium. I also need to watch my intake of potassium chloride which is used in some salt substitutes to replace sodium chloride. I figured for anyone else trying to watch their sodium intake, I would describe some of the changes I made, together with any comments about the relative success or failure of the tweaks I made. Those of you who can handle more sodium can certainly make the recipe as originally written.
Big Picture: This recipe was very low in sodium after I swapped out the salt and used a no sodium rub.

Changes:

  • I used Trader Joes 21 Seasoning Salute rub in lieu of Kosher salt to season the green beans.

Comments: These green beans turned out great. They had great taste and did not seem lacking in sodium in any way.
