This recipe came from Williams-Sonoma’s web site and was a perfect candidate for their lidded grill pan, which I picked up last summer. The potatoes are halved and then parboiled. They are seasoned with paprika, salt, cayenne pepper & olive oil. The potatoes were grilled with smoke in this case, where I was using smoke for the chicken wings I was also making. The potatoes were cooked directly, while the wings were mostly cooked indirectly. It was a case of getting double duty out of the burners lit for the chicken. The potatoes had a nice crusty skin and they were quite tasty. They are a good quick grilled side dish.
