For my Mother’s Day 2011 meal I made a batch of CHEESY TATERS and this grilled dish from SERIOUS BARBECUE to accompany the GLAZED PORK LOIN from SERIOUS BARBECUE. The zucchini and summer squash were marinaded for 1 hour and were then seasoned with salt & pepper and sprayed with olive oil before heading out to the grill. The veggies were direct grilled using medium high heat for 12 minutes total. While they were grilling cut side down a grill press was used to help weight them down and enhance the grill marks. When they came off the grill, the veggies were garnished with chopped chives and the green parts of scallion and some shaved Pecorino-Romano cheese. Nothing better to accompany an Adam Perry Lang main course than an Adam Perry Lang side dish. The grilled veggies had great flavor in layers from the marinade, the grilling & the garnish.
