This is the second potato packet recipe I’ve made from Good Housekeeping’s Grilling for Everyday
. It is one of 4 similar recipes that involve combining potatoes and various spices and oils which are sealed up in a foil packet and grilled up over high heat for about 30 minutes. This recipe used Red potatoes, chopped rosemary, parsley, thyme, salt, pepper & EVOO. The potatoes were crispy and had great flavor and the herbs were a close match for the TRI TIP WITH CHIMICHURRI
I made that night. These packets are quick to throw together and low maintenance once you seal up the packet. In fact the hardest part is making sure you seal up the packet good and tight so the potatoes steam not burn. The potatoes were a big hit and people kept going back for more.
