Mashed Sweet Potatoes
The sweet potatoes were sprayed with Canola Oil and seasoned with Kosher salt
The sweet potatoes were wrapped in foil and indirect grilled at 375 degrees for an hour
The remaining ingredients were cinnamon stick, heavy cream, unsalted butter, brown sugar & black pepper. There was also a "secret" ingredient: Grilled banana.
The banana was grilled for 15 minutes until it was blackened.
The unsalted butter was melted in a Dutch oven over high direct heat.
The additional ingredients plus the sweet potatoes & grilled banana were added to the Dutch oven.
The sweet potatoes have just been mashed.
Time to eat.
These sweet potatoes were a great pairing with the Glazed Pork Tenderloins They had great flavor and the banana gave them a unique flavor..

I needed a side dish to go with the GLAZED PORK TENDERLOINS I was making from SERIOUS BARBECUE. This recipe, also from SERIOUS BARBECUE, was the perfect pairing. As the pictures will show, it was a fairly straightforward recipe with one exception. Adam Perry Lang used a 'secret" ingredient, grilled banana, to give this dish an unusual twist. I liked this side so much I think I will make it in a week for Christmas dinner.
