. I was actually looking for Prime Rib tips and one of the Prime Rib recipes was served with these potatoes. I’d made several potato/foil packet recipes this summer and they were great, so I knew this would be a great side for the MONTREAL STEAK PRIME RIB
I was doing for Christmas dinner. This recipe used potatoes cut into long wedges, garlic, sage, kosher salt, black pepper & EVOO. The ingredients were tossed to mix and added to the foil. Four layers of foil were wrapped to make packets that the potatoes steam in on the grill. After cooking for 45 minutes the potatoes were done and were poured into a serving bowl and topped with minced chives and chunks of bacon. The potatoes cooked this way are always infused with flavor. The steaming drives the flavor of the herbs deep into the potatoes. These had great flavor and were crispy on the outside and moist on the inside.
