A simple prep. Slice some Russet potatoes 1/2” thick lengthwise, add some salt, pepper . Then grill & add fresh thyme
The potato planks are oiled & seasoned with salt & pepper & everything is ready to grill
The potato planks were grilled using medium high direct heat for 12 minutes total.
Because the steaks used fresh thyme I used it in lieu of the parsley the recipe called for.
These potato planks are easy to make, quick to cook & depending on the spice you use it can go with any main course

This recipe from Cuisine Grilling magazine was easy to make and by substituting a different fresh herb for the recipe’s parsley, you can tailor it to any main course. Potatoes are sliced lengthwise into 1/2” thick slices and are tossed in some olive oil, salt & pepper. They are direct grilled on medium high heat. The recipe said for 8 minutes and I found 12 minutes is what it really took. Just before serving sprinkle on a fresh herb that compliments the potatoes and your main dish.
