Rosemary Potato Packet
Red potatoes get cut down to uniform size and are tossed with rosemary, orange zest, salt, pepper & EVOO
The ingredients are combined in a big bowl which is covered & they are tossed
The potatoes are now coated with the oil & spices
The potatoes go into the center of a double thickness of aluminum foil
The potatoes are sealed into the foil packet which leaves some room around them for heat expansion
The foil packet is placed over high heat for 30 minutes & is turned once. The tuna steak is almost done grilling on the left
The potatoes are ready to eat once you get them out of the packet. You need to watch out that you don’t get a steam burn
This method of making potatoe on the grill is versatile & lends itself to many variations

It is one of 4 similar recipes that involve combining potatoes and various spices and oils which are sealed up in a foil packet and grilled up over high heat for about 30 minutes. This recipe used Red potatoes, chopped rosemary, orange zest, salt, pepper & EVOO. The potatoes were crispy and had great flavor which was a great match for the Basil-Grilled Tuna Steaks I made that night. The best part is they are quick to throw together and low maintenance once you seal up the packet.
