The title of this recipe from MASTERING THE GRILL
was Smoke-Roasted Peppers Stuffed with Garden Vegetables
which was far too long for the title here. Now I am not a huge fan of peppers but the fillings intrigued me. You slice herbs and veggies up and saute them to make the stuffing. The stuffed peppers were cooked using indirect heat on my gas grill. I used Apple wood to impart the smoke flavor. The finished peppers are finished with some parmesan cheese. The fact I was asked to make them again for the next day, tells you how well they were received.
