These potatoes made the perfect side for the SPICE SMOKED LAMB RIBS I was making this day. One change I made to the recipe was using liquid smoke because I was unable to find smoked Fontina cheese. The potatoes were boiled together with some garlic cloves. Afterwards the potatoes were run through a food mill and combined with the other ingredients including Fontina cheese and the garlic which was minced after it was boiled. The mashed potatoes went into a casserole dish and were topped with some more Fontina cheese and smoked for 20 minutes. The end results were excellent and had enough flavor to not be overwhelmed by the highly flavored lamb ribs.
