I was making SMOKED SWEET POTATOES on my smoker and I thought I’d look for another recipe for smoked veggies that I could do at the same time. This dish fit the bill nicely. There was a ton of chopping involved but my chopper made fairly quick and easy work out of it. The ratatouille smoked for about 2 hours at 225 using some apple wood chunks. The veggie lovers at this dinner went nuts about this, so the next time I have spare room on the smoker I’ll make this again
