The trick is to smoke the meat and not make the meat smoke

Smokey Potatoes w/ Cumin Rub
The potatoes were cut into 8 wedges & parboiled. Meanwhile the rub was ready to mix
The rub was made from Cumin. paprika, brown sugar, kosher salt & black pepper
The rub is mixrd
The potatoes were tossed with olive oil & the cumin rub
The potatoes are ready to be grilled
The potatoes are being grilled under Medium-High direct heat. This was a bit high & next time I will use Medium Low
The cumin rub on the potatoes complimented the marinade for the Carne Asada

These grilled potatoes from Essentials of Grilling were quite good and surprisingly spicy. I say surprisingly because the rub consisted of cumin, smoked paprika, brown sugar, salt & pepper so the pepper would seem to be all that could be responsible for that. The potatoes were parboiled then rubbed with olive oil and the spice rub. The smokey part came from Apple wood chips. The wedges were grilled on medium-high heat per the recipe. Next time I will lower the heat to medium as you have to act fast at medium-high heat. The potatoes can burn quickly. Fortunately I was able to act fast and the few that were a bit crispy around the edges were sought out by some who like them that way. I plan to try these in a few days with some Cuban cheeseburgers that also use cumin. If you like spicy grilled potatoes with a nice hint of cumin these are for you.
