The trick is to smoke the meat and not make the meat smoke

These grilled potatoes from Essentials of Grilling were quite good and surprisingly spicy. I say surprisingly because the rub consisted of cumin, smoked paprika, brown sugar, salt & pepper so the pepper would seem to be all that could be responsible for that. The potatoes were parboiled then rubbed with olive oil and the spice rub. The smokey part came from Apple wood chips. The wedges were grilled on medium-high heat per the recipe. Next time I will lower the heat to medium as you have to act fast at medium-high heat. The potatoes can burn quickly. Fortunately I was able to act fast and the few that were a bit crispy around the edges were sought out by some who like them that way. I plan to try these in a few days with some Cuban cheeseburgers that also use cumin. If you like spicy grilled potatoes with a nice hint of cumin these are for you.
