This side dish for PORK TENDERLOINS WRAPPED IN BACON was good enough that it can stand alone and be made as a side for many dishes. It is courtesy of Weber’s Real Grilling. The ingredients were tomatoes, white cannellini beans, extra virgin olive oil, onion, garlic, red pepper flakes and basil leaves. The tomatoes are roasted on the grill and then diced into chunks. While they cool the onion, garlic and pepper flakes are sauteed. The tomatoes and beans are added and the mixture is brought to a boil then simmered. While this was being simmered I was able to go out and grill up the PORK TENDERLOINS WRAPPED IN BACON. Just before serving the basil leaves were torn and mixed in with the beans. The dish was perfect with the tenderloins, but had a great taste and could be served as a side with most any dish.
