Fried haddock is my favorite fish dinner. This dish comes in a close second and is actually better in some ways. Smoking the fish gave it a great flavor and it retains more moisture than the fried version. The only thing that gave fried haddock the winning edge for me, was the great crispy fried skin you get. If you don't like the skin on fried haddock definitely try this dish, you'll probably like it better.

Fish and Chips was always a favorite of mine. I never dreamed of being able to deep fry own fish and chips until I got my BGE. I never wanted to “stink” up the house deep frying fish. But using the Dutch oven on the Egg I was able to make my first deep fried meal at home. I started with same day freshly caught haddock. I found a very detail recipe from the Cook Illustrated TV show which was great for a newbie like me. But I also knew that the folks at CI had tested this recipe to be the best of the best. Following the directions I turn out fish and chips that were every bit as good as anything I might find in a high end seafood restaurant. The best part is, I can make this anytime I want without having to make a special trip into the city. I can just get fresh fish in my town and make it at home on the spur of the moment.

This was a very interesting and different take on grilled fish. This Spanish recipe used a spicy marinade which was put on AFTER the fish was grilled. The fish was grilled and was allowed to cool to room temperature and then it was placed in a spicy marinade and refrigerated for six hours. It is served at room temperature and was excellent. It was totally different from any fish I tried before. Another good thing is it makes a great make ahead recipe because it can stay in the fridge for a day or so before serving.

This is one of these great dishes that looks as great as it tastes. The fillets are marinated for an hour and in the meantime stuffing is made. The left and right halves of the fillets are coated on the inside with the stuffing and then folded together and tied. Slices of bacon are placed on the skin side, underneath the strings. The bacon helps moisten and flavor the outside of the fish while it is being smoked for around an hour. The trout tasted every bit as good as it looked, and it looked excellent!
Motivation:
People are always asking me what my favorite recipes are. This section had it's origins in a seven part BLOG entry I wrote in 2011 called A Few of My Favorite Things. I have made many great dishes since then and also started making other types of foods such as Stir Fries. This section needed to be updated and expanded to stay current or be dropped. I chose the later and you have the results of my reworking the section in the Fall of 2014
